Join us for a once in a lifetime experience on the Middle Fork of the Salmon River.  This fabulous trip pairs amazing wines, chef prepared food, and the best river trip in the country!

Make your next rafting trip one to remember. Join Chef Lon Symensma and Jeff Stoneking on the Middle Fork of the Salmon as they and the MFA team prepare gourmet meals riverside. This culinary-focused adventure features one of Denver's premier chefs who's restaurant ChoLon has been ranked in the top ten of 5280’s “25 Best Restaurants” list every year since it opened. Each day we will boat through the spectacular River of No Return Wilderness, arriving at a beautiful camp set up by the MFA team. At night we will enjoy a river-side dinner paired with specialty wines from The Winery at Holy Cross Abbey served beneath the stars.

Chef Lon Symensma opened ChoLon in 2010, having already  earned  two  stars  from  the  New  York  Times  during  his  time working at  Buddakan  in  New  York  City.   In the last eight years, he has opened Cho77, Concourse, and BorraCho Tacos, as well as founding the ChoLon Restaurants Concepts group with business partner Christopher Davis-Massey. In 2018, Symensma opened Western-European concept LeRoux with Executive Chef Jeff Stoneking, in addition to relocating Cho77 to downtown Denver. 

 

Chef Jeff Stoneking has been with the ChoLon group since its opening in 2010. He was a member of the original ChoLon chef team working under Chef Lon Symensma, and has been part of the opening team of every concept that Chef Lon has undertaken since. Stoneking is Executive Chef of the group’s newest Western-European project LeRoux and the relocated Cho77 concept. He did his culinary apprenticeship with the Broadmoor Hotel in Colorado Springs, and has lived in Denver for the last 12 years.

Since July 2002, The Winery at Holy Cross Abbey has been producing award winning wines and attracting visitors to their unique Colorado location from all over the world. Striving to produce the best Colorado Wine, the winery is located on the pastoral and serene grounds of The Holy Cross Abbey, nestled against the spectacular backdrop of the Wet Mountains.

By day we treat you to the sights and sounds of the crown jewel of river trips - the Middle Fork of the Salmon River.  Fish for west-slope cutthroat trout, hike to spectacular vistas, soak up the scenery or soak in natural hot springs along the river - there is truly something for everyone on the Middle Fork of the Salmon!

When you arrive at camp your tent will be waiting for you, already set up so you can get changed into dry camp clothes.  Meanwhile, we will prepare hors d'oeuvres, paired with the perfect wine varietals from The Winery at Holy Cross Abbey as the golden hour lights the canyon walls in warm yellows and pinks.

As the evening draws on we will settle around a fire and delight on river-side prepared meals and wines. Chef Lon Symensma is known for innovative cuisine inspired by flavors from near and far. His flagship restaurant, ChoLon serves modern Southeast Asian cuisine with a fresh twist, vibrant colors and exciting flavor combinations.  This is Rocky Mountain wilderness cuisine with exotic influences.
