The Culinary Adventure
By Day we treat you to the sights and sounds of the crown jewel of river trips - the Middle Fork of the Salmon River. Fish for west-slope cutthroat trout, hike to spectacular vistas, soak up the scenery or soak in natural hot springs along the river - there is truly something for everyone on the Middle Fork of the Salmon!
When you arrive at camp your tent will be waiting for you, already set up so you can get changed into dry camp clothes right away. Meanwhile, guides will be preparing hors d'oeuvres, expertly paired with the perfect wine varietals from the Winery at Holy Cross Abbey. Imagine local Idaho cheeses and native huckleberries highlighting the light, crisp citrus of the Sauvignon Blanc or Monterrey Chardonnay as the golden hour lights the canyon walls in warm yellows and pinks...
Mingle with the winemaking team while the guides prepare your main course. Learn from their expert staff about the wine, the grapes and the winemaking process as well as the specialty sourced Idaho ingredients. We have curated a fresh, local menu to highlight the incredible wines and the bounty of the Rocky Mountains: grass-fed Idaho bison and lamb, farm fresh produce, and hand baked Odd Fellows' Bakery breads.
Depending on the evening's main course, the featured wines will vary. You can expect Viognier, Cabernet Franc, Syrah, Merlot Reserve, & Cabernet Sauvignon. And rest assured the wine will flow! There will be fabulous, award winning wines available to match everyone's palate!
Before retiring to your tent, savor Divinity, the port-style dessert wine, with handcrafted Idaho dark chocolate. The velvety sweet richness of the wine will drink like a chocolate covered cherry. Sip, let the chocolate melt on your tongue as you look up at the milky way creating a river of stars across the sky. Divine!
